Toni’s Stuffed Peppers
Create a ‘gourmet meal’ without breaking the bank – or your back.
Ingredients:
2 bell peppers
1 large can diced tomatoes (~28 oz)
1½ lb of ground meat, your choice
1 med onion, chopped
4 cloves of garlic
1½ tsp oregano
1½ tsp basil
1 tsp onion salt
- Brown ground meat in frying pan. Drain fat when browned.
- Return browned meat to pan over medium heat and add Cirino’s Bloody Mary mix, fresh onions and minced garlic. Finish cooking meat to infuse flavors.
- Add diced tomatoes and seasonings to pan with ground meat mix. Simmer and reduce tomato juice to thicken mixture.
- While mixture is reducing, cut bell peppers in half and remove seeds. Bring water with a pinch of salt to a boil, then place cleaned pepper halves in boiling water for 2 minutes.
- Turn on oven to preheat to 350 degrees while blanching peppers.
- Drain water from peppers, place on greased 9×9 oven pan.
- Pile the reduced meat mixture into the pepper halves – with a little overflow around them if desired. Top with your choice of shredded cheese.
- Bake in oven at 350 degrees for 20 minutes, or until cheese is melted and lightly browned.
- Remove from oven, place pepper on plate, garnish with a little overflow and parsley then serve with a fork and knife.
